I love to cook and I love to eat. Below is one of my favorite muffin recipes. If you bake them in mini muffin cups they are not only hearty, tasty, and perfect for a morning cup of coffee, but each one is only 70 calories. Packed with raisins, blueberries, and walnuts they have less flour in them than carrots but they taste like perfect little muffins anyways.

There’s something satisfying about eating a little healthy muffin with my morning cup of coffee. For me, it’s just the right touch of sweetness to complement the java. It’s surprising how a small touch can awaken a larger joy while the tasks get done. 1-1/2 cups all-purpose flour
1 cup wheat germ
1/2 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
1-1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 T egg white
3/4 cup buttermilk
8 T canola oil
5 T molasses
3 cups grated carrots
1 cup raisins
1 cup blueberries
2/3 cup chopped walnuts

In a large bowl, combine the first seven ingredients. Combine the eggs, buttermilk, oil, and molasses; stir into dry ingredients just until moistened. Fold in carrots, blueberries, walnuts, and raisins.

Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before eating the first. Enjoy!
